Chef’s Special Recipe:   Pimento Cheese Filling    Makes 20 1oz servings

Ingredients for Pimento Cheese Filling

  • 2 cups Sharp Cheddar, Shredded
  • 1/4 cup Jalapenos, Seeded and Roasted
  • 3 Pimento Pepper, Small Diced
  • 1/2 cup Parsley-Finely Chopped
  • 8oz  Cream Cheese, Room Temp
  • 1/4 cup Mayo
  • 2oz Creamy Brie
  • Salt to Taste

Ingredients for The Breading

  • 1 cup      Flour
  • 2 cups    Pank0
  • 1 cup      Buttermilk
  • 1/4 cup  Parsley-Finely Chopped

Pre-heat vegetable oil to 290 degrees. In a medium size mixing bowl add all wet ingredients for the filling. Cut down roasted jalapenos, red peppers, and finely chopped parsley. Add cheddar and mix. Have 3 separate bowls. One for flower, one for panko, one for buttermilk.  Add finely chopped parsley to panko. Scoop 1oz portion of cheese mixture and place into flour. Then into buttermilk, back into flour, buttermilk and then panko.  Roll into a ball shape. Repeat until mixture is gone.  Gently place each fritter into the heated grease and let cook for approximately 2 minutes or until golden brown.  Remove from oil , place on drip pan and enjoy!

Chef’s Special Recipe:   Spiced Apple Brie Crostini    Makes 24

  • 1 French Baguette-1/4 in slices
  • 1 Gala Apple
  • 12oz Creamy Brie or Brie Wheel (Cut in Slices)
  • 1/2 cup Brown Sugar
  • 1 Tablespoon Cinnamon
  • 1 Teaspoon Nutmeg
  • 1/4 Stick Butter
  • Berries to Garnish (Blueberry, Raspberry, Blackberry)

Apps_Apple_Brie_001Directions: Pre-heat oven to 350 degrees. Small dice the gala apple.  Toss apple with sugar, cinnamon and nutmeg. Place in strainer for 30 minutes. Slice Baguette into1/4 inch slices.  Melt butter and paint the top of eat crostini. Pinch of salt and pepper to each crostini. Place in oven for 6-8 minutes until crispy and golden brown.  If using sliced brie off the wheel, add as crostini’s come out of the oven to melt.  Let rest and cool.  If using creamy brie put in a piping bag and pipe about 1/2oz to each crostini.  Add about a tablespoon of drained spiced apples to each crostini. Garnish with a berry of your choice (blueberry, raspberry, or blackberry…or alternate for a vibrant color variation.)
